anyone have tips on water level monitoring? devices that track water level being too high or too low? I really need some suggestions

I use the Aeotec Water Sensor 7 to check when water level has dropped below a set level. I use this one because the contacts do not rust. The contacts on other sensors have rusted. Also, the Aeotec does not repeatedly send messages to your hub that it senses water.
If you want to know when the level is too high and too low, you may need two sensors.

A pretty simple and inexpensive method I used in my swimming pool skimmer box to detect when a certain water level went over a set level or under a set level was using these Stainless type of float levels together with a Shelly Plus I4DC that has provision for up to 4 inputs.
One side of the float switch connected to the shelly common and the other side of float switch connected to one of the 4 Shelly inputs.
The DC version works between 5V - 24VDC and would be safe for your application.
The Shelly would need to connect to a Home Automation Platform such as Hubitat in order to feed its status to Sharptools and carry out your desired automations.
