Is there any way to edit the icon for the quick tiles in the notification shade?
No, the Quick Tiles in the Android Notification Shade are fixed/static. (eg. a single icon to identify Modes and a single icon to identify Things)
If I remember correctly, there are some Tasker plugins that can create Quick Settings Tiles on Android. You might be able to use those alongside the SharpTools Tasker Plugins to accomplish what you are looking for though.
